What the Madrid Menu is
The Madrid Menu is the tasting menu with which Mario Sandoval tells the story of the city through his cooking: seventeen courses that run from Madrid's origins in the 9th century to today's table, by way of Sephardic cooking, the cooking of the royal court and royal game. Each dish is a chapter, and guests do not receive them seated at one table: they move through them.
The menu is served in six spaces: the cocktail bar, Ónix, the wine cellar, the sacristy, the kitchen and the dining room. The cellar is not just a place of passage. Two courses are served there: the chanfaina de duelos y quebrantos on unleavened bread, a 16th-century preparation that already appears in Don Quixote and in Lazarillo de Tormes, and a Pedro Ximénez grape in three textures: crunchy, liquid and tart.
Who signs the pairing
The Madrid Menu pairing is by Rafael Sandoval (Madrid, 1964), Coque's sommelier and head of its wine cellar. Rafael received the 2017 Spanish National Gastronomy Award for Best Sommelier, the 2018 Prix au Sommelier from the International Academy of Gastronomy and the Gastro&Cía Sommelier of the Year 2018 award. With his brothers Mario (kitchen, 2013) and Diego (dining room, 2016) he completes a full set of National Awards in the three disciplines of a restaurant, something without precedent in Spain.
How to pair the history of a city
The cellar's approach is the same as the kitchen's: to look to history. The wines of Madrid are present in the literature of the Spanish Golden Age, and the pairing recovers that memory with very old wines woven into the journey, alongside labels from around the world chosen for what they bring to each dish.
There are two pairings. The Armonía pairing accompanies each course with a glass chosen for its produce. The Premium raises the register with labels such as Laurent-Perrier Héritage, Charly Nicolle's Chablis Grand Cru Bougros 2022, Château Beychevelle 2022, Vega Sicilia Reserva Especial and two VORS sherries: Tradición and Valdespino's Niños PX.
